Geeky Recipe #3: Hard Cider Cupcakes- My Morning Apple Juice

Warning: I'm a bad role model and condone underage drinking. Don't judge!


Since the results of last week's question on the next Geeky Recipe was inconclusive.


 Alright, alright, there were no results....Anyways, I overruled the rules and decided to just give you guys the greatest cupcake recipe ever. For reals. My friends and family LOVE this cupcake. Its awesome. Plus alcohol. Hard cider to be precise.

If you haven't noticed from previous posts, I love me some hard cider. Its bubbly, sweet, tart, and has a relatively high alcohol content. I can drink it all day long.


This recipe comes from Espresso and Cream, an awesome food and fashion blog that should be much more popular. For the recipe, though, I used Woodchuck's Granny Smith cider, not Strongbow. I like a tarter cider and the Granny Smith one is my favorite non-seasonal Woodchucks.


On to the awesome!!!!

Ingrediants:

1/2  cup butter, room temperature
1 c sugar
2 eggs
1/4 cup apple jelly
1 tsp vanilla
1/2 tsp cinnamon
2/3 c all-purpose flour
1/2 cup hard cider
3/4 c self-rising flour

1/4 c cocoa powder
1 tsp cinnamon

1.) Preheat ove to 350 degrees F. Line cupcake tin. 
2.) Beat butter until creamy. Add the sugar until well combined, then add the eggs one at a time until the batter comes together. Then, add in the jelly, vanilla, and cinnamon.



3.) Add in the all-purpose flour until the batter starts to come together. Then mix in the cider, then the self-rising flour. Feel free to drink the remaining cider when you put the cakes in the oven. I did. Remember? Bad role model here.

(try not to eat ALL the batter. Yes, it is that good)

4.) Put into the tins, then bake 12-15 minutes until lightly brown and a toothpick comes out clean. Cool completely before you ice.
5.) Now, promise you'll be open minded when I go over the icing. Yes, I use a pre-made icing. Yes, I have no shame. But trust me, the icing is really good. There's a reason why CaptainBarnes eats jars of it. If you want a real icing, Espresso and Cream gives you one.

Just take a pre-made white icing and add in the cocoa powder and cinnamon. Trust me, its good. Then ice and enjoy!


TA-DA! Houston, we have cupcakes! With mustaches. Because why not.


The cupcakes are guaranteed to be light, fluffy, and flavorful. And the *blasphemous* icing pairs well with it. Drink with a Granny Smith cider or a nice macchiato.

  2. I think you've had these before, I used to bring them into the arch lab occasionally. Do try them, though, they are amazing!
