With cooking you can just throw things together and taste as you go. You have a much better grasp of how the food is tasting and how it will turn out. Baking...not so much. You have to measure and get proportions right, otherwise horrible things can happen...
Also, with the internet and cook books at my beck and call, it would be soooo much easier just to try one and give credit to that person. But today is not that day! Today I do an original recipe and don't epically fail!
Strawberry season has arrived in Florida, and as I promised in my Strawberry Cookie post, I have a new strawberry recipe: Strawberry-Banana Bread.
Ingrediants:
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/8 tsp nutmeg
2 eggs
3 ripe bananas, mashed
1 cup diced strawberries, coated in a little flour
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter
1.) Preheat oven to 350 degrees F. Grease a 9x5x3 loaf pan. Mash up the bananas and dice the berries and coat with flour. The flour with soak up their extra juice and prevent them from falling to the bottom of the bread.
2.) In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Make a well in the center.

4.) Add the egg mixture to the dry ingredients until just combined. It will be lumpy. Then gently fold in the strawberries.
5.) Bake 50- 60 minutes depending on your oven and when a toothpick inserted comes out clean. Cool in a pan for 10 minutes then cool on a wire rack. Enjoy!
